Teatime Treat - Mixed Fruit Loaf

This is a really easy recipe that makes a moist fruit loaf. I use an actual teacup for measuring here, which holds 8 fl oz water.

Into a large pan place:
2 cups mixed dried fruit, or one each of raisins and sultanas (golden raisins)
1 cup sugar
2oz butter or marg
1tsp bicarbonate of soda (baking soda)
1 cup warm water
Bring slowly to the boil then simmer for 15 minutes. Leave to cool. When cool mix in:
2 beaten eggs
2 cups self raising (rising) flour

Preheat the oven to 350F, 180C, Gas mark 4. Put the mix into a lined 2lb loaf tin. Bake for 1 hour, or until a skewer or knife pushed into the middle comes out clean.

Delicious on its own or spread with butter. Will keep for ages wrapped up, and gets even better with keeping.
