This is a fresh tasting and vibrantly coloured soup that can be made in 15 minutes. Makes 4 servings.
1 small onion, chopped 1lb frozen peas, preferably petit pois 1 1/2 pints chicken or vegetable stock
Cook the onion in a little olive oil until soft. Add the peas and stock, and simmer about 5 minutes until the peas are cooked. Blend and serve.
You can add extras to this - shredded chicken, chopped mint leaves, pumpkin seeds, a swirl of yogurt, etc.
Would probably work well using ham stock and ham pieces too.
