Chinese Five Spice Chicken

Doing this from memory, hope it's not too incoherent.

Ingredients -

one pound chicken breasts

two and a half cups chicken stock

one cup uncooked long grain rice

two heaping tablespoons cornstarch

two heaping teaspoons Chinese Five Spice

one onion diced

one heaping teaspoon turmeric

some cooking oil

something green to garnish (optional)

 

Thorougly mix cornstarch and Chinese Five Spice

Cut up chicken breasts into roughly equal size pieces. I would say cube, but how do you cube raw chicken breast?

Coat chicken pieces in starch spice mixture.

Put some oil in a hot wok or big frying pan.

Put in the chicken and toss around until cooked. Remove with slotted spoon or tongs and set aside.

Add a touch more oil and cook the onion until transparent.

Add the rice, chicken, turmeric and stock to the wok. Turn up the fire until it starts boiling furiously, then turn the fire down to a slow simmer.

Go hang out at TM for about fifteen to twenty minutes. When all the stock has been absorbed by the rice, you're done. Tastes great!
