Starting this one with a traditional Scottish way of cooking herring.
Herrings in Oatmeal
Get some cleaned herrings and some coarse oatmeal (not porridge oats which are rolled oats). Season the fish with salt and pepper then press the oatmeal into the fish, coating it well on both sides. Fry in a little oil, skin side up first, for a few minutes each side until cooked through.
