Goats Cheese & Bacon Salad with Honey & Mustard dressing
This is a hearty salad that can be served as a starter or main course.

Put mixed salad leaves, enough for four and preferably a mix of sweet and bitter, into a big bowl. Get about 4 oz crumbly goats cheese and crumble it over the leaves. Cook a few bacon rashers. While they're cooking, make the dressing (an easy way is in a jam/jelly jar with a lid):
3 tblsp olive oil 1 tblsp red wine vinegar 1 tsp runny honey 2 tsp wholegrain mustard
Whisk or shake till well combined. Quickly chop up the cooked bacon and scatter the bits over the leaves. Pour over the dressing, toss the salad and serve.
